What’s better than pizza night? A trio of unique and delicious pizzas. These recipes all start with soft, ready-made naan bread as the base to keep it simple and fast. Each mini pizza features its own topping combo so there is something for everyone. To finish, a drizzle of Manuka Doctor honey adds a hint of natural sweetness and a touch of wellbeeing®—bringing digestive, energy, and immunity support to every bite.
1. Blueberry, Ricotta & Caramelized Onion
Ingredients:
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 cup thinly sliced red onion
- ¼ teaspoon salt
- ¼ teaspoon red pepper flakes
- 2 tablespoons Manuka Doctor Honey (MGO 80)
- ½ cup ricotta cheese
- Zest of 1 lemon
- ½ cup grated mozzarella cheese
- 1 cup fresh blueberries
- Extra Manuka Honey, for drizzling
- Salt & pepper to taste
Directions:
- In a skillet over low heat, warm the olive oil and butter. Add red onion, salt, and red pepper flakes. Cook for 10–12 minutes until soft and caramelized. Stir in the honey and cook 5 more minutes. Set aside.
- In a small bowl, mix the ricotta with lemon zest.
- Roll out the dough on a floured surface and place it on a pizza sheet or stone.
- Preheat oven to 375°F.
- Spread the ricotta mixture over the dough. Add half the mozzarella, the caramelized onions, and blueberries. Sprinkle with remaining mozzarella. Season with salt and pepper.
- Bake for 30–35 minutes, or until golden and bubbly.
- Let cool for 5 minutes. Drizzle with honey before serving.
2. Fiery Broccoli & Whipped Ricotta
Ingredients:
Whipped Ricotta:
- ½ cup ricotta cheese
- ⅓ cup crumbled feta cheese
- 1 garlic clove, minced
- Juice and zest of 1 lemon
- 2 tablespoons olive oil
- Salt & black pepper to taste
Broccoli Topping:
- 1 head broccoli, florets only
- 1 garlic clove, minced
- ½ teaspoon red pepper flakes
- Zest and juice of ½ lemon
- ½ cup grated mozzarella cheese
Additional:
- Extra Manuka Doctor Honey (MGO 325), for drizzling
Directions:
- Whipped Ricotta: Blend all ingredients in a food processor until smooth. Set aside.
- Broccoli: Boil florets for 3 minutes, just until bright green and slightly tender. Drain and let dry. Chop into small pieces.
- Toss broccoli with garlic, red pepper flakes, lemon juice/zest, and mozzarella.
- Roll out the dough and place on a baking sheet.
- Preheat oven to 375°F.
- Spread whipped ricotta on the dough, top with broccoli mixture, and season with salt and pepper.
- Bake for 30–35 minutes, until crust is golden and cheese is bubbly.
- Let cool slightly, then finish with a generous drizzle of Manuka honey.
3. Arugula, Feta & Olive
Ingredients:
- ¾ cup marinara sauce
- 1½ cups grated mozzarella cheese
- 4 oz crumbled feta cheese
- ½ cup pitted Kalamata olives
- ½ teaspoon dried oregano
- Salt & pepper to taste
- 4 cups arugula
- 1 tablespoon olive oil
- 2 tablespoons Manuka Doctor Honey (MGO 125)
- ¼ teaspoon red pepper flakes
Directions:
- Roll out the dough and place on a pizza sheet.
- Preheat oven to 375°F.
- Spread marinara over dough, then sprinkle with half the mozzarella and feta.
- Add olives, then top with the remaining cheese and season with oregano, salt, and pepper.
- Bake for 30–35 minutes, or until crust is golden and cheese is bubbly.
- While baking, mix the honey and red pepper flakes in a small bowl and let steep.
- Once baked, top pizza with fresh arugula, drizzle with olive oil and the honey mixture. Add a pinch of salt.
