Salad Ingredients:
- 2 cucumbers, thinly sliced
- 2 ears of corn (grilled for extra flavor), kernels cut off the cob (bi-color, yellow, or white)
- ¼ cup fresh basil, thinly sliced
- 2 tablespoons fresh chives, chopped
Manuka Honey-Lemon Dressing Ingredients:
- ¼ cup neutral oil (such as avocado, grapeseed, or sunflower oil)
- Zest of 1 lemon
- Juice of 1 large lemon
- 1 tablespoon Manuka honey
- 6–8 fresh mint leaves, chopped
- Salt and freshly ground black pepper, to taste
Directions:
Dressing:
- Zest and juice the lemon into a tall cup or mixing bowl.
- Add the oil, Manuka Doctor honey, chopped mint, and a pinch of salt and pepper.
- Use an immersion blender or regular blender to blend until smooth and emulsified.
- Pour over the salad and toss gently to coat.
Salad:
- Slice the cucumbers into thin rounds or half-moons, depending on your preference.
- Cut the corn kernels off the cob (use raw or grilled).
- Chop the herbs: basil, chives, and mint.
- Toss everything, including the dressing together in a large bowl. Serve immediately or chill for 15 minutes for a more infused flavor.
